Anchovy and avocado wrap

Anchovy & Avocado lunch wrap recipe

This incredibly quick and easy lunch recipe only takes a few minutes to make and is absolutely delicious! Filled with healthy fats, essential fatty acids and fibre, it will keep those afternoon hunger pangs at bay.

Ingredients:

  • 1 or 2 tortilla wraps (depending on how hungry you are)
  • 1 heaped tbsp. hummus
  • 1 handful rocket leaves
  • a few marinated anchovies
  • ½ sliced avocado
  • 1 handful sliced cherry tomatoes
  • 2 tbsp. natural yoghurt

Method:

Spread the hummus over the wrap. Add the rocket on top followed by the avocado, cherry tomatoes and anchovies. Drizzle the natural yoghurt over the top, fold the wrap and enjoy!
