What better mid-afternoon treat is there than some delicious chocolate cookies? But then again, the delight of eating them doesn’t last long. These nutritious, easy to make, dark chocolate cookies with pecans will not only make your taste buds sing but they will also appease your conscience because they are packed with healthy nutrients and beneficial oils. And they are so filling that just one will be enough.
2 cups of chopped pecans
1 cup of rolled oats
¾ tsp of baking powder
½ tsp of cornflour
½ tsp of salt
¼ cup of runny honey or maple syrup
¼ cup of olive oil
90g of chopped dark chocolate
½ tsp of vanilla extract or the content of ½ vanilla bean
First thing to do is blend the pecans to a finely ground mass in a food processor. Add these to the remaining dry ingredients (apart from the chocolate) and mix together. Make a well in the centre, add the liquid ingredients and stir to combine. Fold in the chocolate chunks and form the mass into about 10 cookies.
Bake them at 170 degrees for about 20min and let them cool down on a wire rack before eating.
