A FRUITY BREAKFAST! – BANANA & BERRY COMPOTE PANCAKES

Don’t you just love healthy and sweet pancakes?  We do!  Especially at breakfast time … These pancakes are quite delicious without containing any refined sugar, just natural honey and the sweetness of the fruits.  Not only do you get a vitamin boost but also enjoy the pharmacological benefits of the Extra Virgin Olive Oil.

Pancakes:

1 large ripe banana                                       2 free range eggs + 1 extra white

2 tbs milled flax seeds                                 1/2tsp cinnamon

1 tbs extra virgin olive oil                             2 tsp coconut oil

 

Sauce:

     1 tsp honey                                            50g raspberries

50g strawberries

 

Mash the banana and crack the eggs into it, stirring until the mixture becomes somewhat homogenised.

Add the milled flax seed, cinnamon and olive oil stir into the mixture.

Place a greased frying pan on medium heat, pour on the coconut oil.

Add a spoonful of banana pancake mixture.

Flip the pancake after about 25 seconds or when it browns.

To prepare the sauce, place berries in small saucepan and bring to gentle boil using a wooden spoon to mash and mix fruits.  Allow to cook for 5 minutes, add the honey.

Pour sauce over pancakes.
