Is there a better way to start out your Sunday than with a pile of freshly made healthy pancakes? We’ve brought you this wonderfully healthy, mouth-watering recipe that also happens to be vegan and sugar-free!. The buckwheat flour provides a higher amount of protein, fibre and micronutrients than normal flour, making the recipe even more nutritious.
However, we should warn you: these healthy pancakes are extremely addictive, so please don’t expect to eat only a couple of them. It’s not even worth trying.
2 ripe bananas
1 tbsp. of ground flaxseed
¾ cup of plant milk
1 cup of buckwheat flour
1 tsp of cinnamon
1 tsp of baking powder
1 tsp of vanilla extract (or content of ½ vanilla bean)
¼ tsp of pumpkin spice
Mash the bananas until creamy and mix them with ground flaxseeds and a plant-based milk of your choice. Add the rest of the ingredients and combine into a smooth pancake batter, adding more milk to reach the right consistency. Pan fry the pancakes in a film of coconut oil in a non-stick pan.
Topping suggestion: coconut yoghurt, berries and fresh mint.
While of course there is no right or wrong when it comes to pancake toppings, we suggest a delicious combination of coconut yoghurt, mixed berries and fresh mint leaves.
