green lentils + capers + red onion + garlic + parsley leaves + sun dried tomatoes + extra virgin oil olive + lemon juice + pine nuts + pepper + fresh basil
Cook one cup of lentils in plenty of salted water until tender. Add a handful of sliced sun dried tomatoes and one sliced red onion to a few fresh leaves of parsley and basil. Add 2 tsp of capers and 2 chopped cloves of garlic. Stir in previously cooked lentils. Meanwhile whisk together olive oil, lemon juice and a pinch of pepper to make a dressing. Drizzle dressing over salad. Sprinkle a few pine nuts on top.
