This delicious Mediterranean olive tapenade is an interesting alternative to your usual spread. You will be surprised at how rich and flavourful it is. But this is not the only special thing about our olive tapenade: as the name says, the main content is olives which is a powerful ingredient. They provide you with oleic acids, a plethora of antioxidant compounds and may have an important role in maintaining a healthy bone density thus preventing osteoporosis.
1 cup of pitted olives
½ cup of ground walnuts
1 clove of garlic
3 tbsp. of capers
1 tbsp. of extra-virgin olive oil
2 tsp of lemon juice
½ tsp of oregano
¼ tsp of thyme
¼ tsp of basil
Blend all the ingredients in a food processor until the mixture reaches a spread-like consistency.
You can put the Mediterranean olive tapenade onto your favourite wholemeal bread, oatcakes, a piece of carrot or celery or use it as a dip.
Our suggestion is to make a romantic tray with artichoke hearts, sundried tomatoes, goat or feta cheese, honey, pear, sourdough bread and the Mediterranean olive tapenade. Mix and match trying different combinations.
