Roasted Rhubarb and Orange Fool

This delicious and heart-boosting Roasted Rhubarb and Orange Fool is suitable as a breakfast topper or as a desert.

This recipe is relatively quick to prepare, but you will need to add in some chilling time (for you if you like, as well as the rhubarb!). It could be the perfect dish to start on a Friday night as it will be enough for you and a friend. You can dress it up as a desert or add it to granola for breakfast.


If you can, buy organic oranges as you are zesting the skin. If you can’t find them then please wash your oranges well. Light brown sugar could be replaced with Agave Nectar or Coconut Sugar.


You will need:


200g fresh, washed, chopped rhubarb

1 tsp grated orange zest (organic if possible)

40g light soft brown sugar

Juice of ½ orange

100g coconut yoghurt or crème fraiche

1tsp cinnamon or ginger

Extra orange zest to decorate


Preheat your oven to 200C/180C fan/gas mark 6, and place chopped rhubarb in a non-stick roasting tin, and sprinkle with the grated orange zest, the sugar and add the orange juice.


Bake this deliciousness in the oven, uncovered, for about 15-20 minutes. When it is tender but still holding its shape, put it all into a mixing bowl and leave to cool. Once cool enough pop it in a covered bowl in the fridge for at least an hour.


When cold, put your rhubarb mixture in a blender or food processor along with 2 tablespoons of coconut yoghurt or crème fraiche and a teaspoon of cinnamon or ginger, and blend until smooth. Then transfer it back to the mixing bowl, and fold in the rest of the yoghurt or crème fraiche until combined.


Your Roasted Rhubarb and Orange Fool is now ready to enjoy or you can chill before serving but remember to decorate with some more orange zest when you are ready to eat. You might like to try a few shavings of dark chocolate or crystallised ginger too.
