Quick Protein Pancakes for exam days

Try these healthy protein pancakes for a quick and filling breakfast!

Don’t you just love a quick, filling, and healthy breakfast?!… These pancakes are delicious without containing any refined sugar, just natural honey (if you chose to add) and the sweetness of the fruit. Not only do you get a vitamin boost but also enjoy the pharmacological benefits of the Extra Virgin Olive Oil.
We like to make these on mornings where you need to be kept full and when you can’t afford a glycaemic dip, like exam days! See our blog on eating for exams for more ideas.
Protein pancake ingredients:
1 large ripe banana 2 large free-range eggs 1 tbsp milled flax seeds ½ tsp cinnamon 1 tbsp extra virgin olive oil 2 tsp coconut oil
Topping:
1 tsp honey A handful of berries – the darker the better Chopped mint Optional – nuts like almonds or pecans
Mash the banana and crack the eggs into it, stirring until the mixture becomes somewhat homogenised. Add the milled flaxseed, cinnamon and olive oil and stir into the mixture.
Place a greased frying pan on medium heat, add the coconut oil. Pour spoonsful of the banana mixture into the pan to form pancake shapes. Flip the pancake when it starts to form or when it browns.
Pop on a warm plate and drizzle with honey and enjoy with a handful of berries, chopped mint and for extra protein add a few nuts like almonds or pecans.
If you have a bit more time to make a compote then, place 100g of berries in a small saucepan and bring to gentle boil using a wooden spoon to mash and mix. Allow to cook for 5 minutes, before adding the honey. Pour sauce over pancakes and enjoy!
