Quick Homemade Protein Flapjacks

These protein flapjacks are a quick and healthy alternative processed snack bars.

Unlike shop-bought bars, homemade flapjacks are free from unnecessary additives and refined sugars – plus you can customise them to suit your cupboard ingredients or to be dairy free or nut free etc
When made with natural ingredients, protein flapjacks are an energy-packed snack loved by gym-goers, busy parents, those needing a breakfast boost and anyone who wants to feel fuller for longer to help with snacking and weight loss.
Healthy protein flapjacks are high in protein – rich in fibre - give long-lasting energy -and are naturally sweet.
Ingredients:
90g oats
130g chopped dates (can be bought ready chopped for ease)
40g desiccated coconut
35g milled flaxseeds or ground almonds
45g mixed seeds or chopped nuts
25g protein powder (try plant based)
2 tbsp coconut oil
3 tbsp maple syrup/honey
1 tsp vanilla essence
Alternative ingredients: dark chocolate chips, cinnamon, chia seeds, goji berries, the list is endless!
Method:
Preheat your oven to 175°C (150°C fan) and line a square baking tray with parchment paper.
Mix the dry ingredients – oats, dates, coconut, flaxseeds/almonds, seeds/nuts, and protein powder.
Mix the wet ingredients - melt the coconut oil in a large pan, then stir in the maple syrup and vanilla essence. Let it cool slightly.
Combine mixtures – add the dry ingredients together and stir until well coated.
Press into tray – use the back of a spoon to compact the mixture firmly.
Bake for 15 minutes until lightly golden.
Cool completely before cutting into small squares.
Keep in an airtight container for up to 7 days. Freeze for up to 3 months – wrap individually for easy grab-and-go snacks.
